- Sift baking powder,baking soda, sugar, salt & Rajgira flour together..
- Add ghee, chopped Dry fruits, cardamom powder & vanilla extract in sifted flour. Mix well..
- Add curd and mix well. Knead a soft dough. Keep it in fridge for 30 minutes..
- Preheat oven on 180 °C for 10 minutes..
- Take out dough from fridge. Roll it in rectangular log. Cut them in 1/4" thick slices..
- Line a baking tray either parchment paper or aluminum foil. Place cookies in baking tray..
- Bake cookies on pre heated oven for 20 minutes on 160°C or until it's edges gets golden brown..
- Place almonds pieces after 10 minutes of baking so that almonds stick well in cookies..
- Rajgira cookies are ready. Remove baking tray out of oven..
- With the help of spatula transfer them on cooling rack. Let them cool on room temperature..
