Crispy and yummy cookies with the richness of Ragi (Finger Millet) along with cardamom. You can cook Finger Millet/Ragi cookies using 8 ingredients and 12 steps. Here is how you cook that.

Ingredients of Finger Millet/Ragi cookies

  1. It's 250 gm of fine finger millet/ragi flour.
  2. It's 150 gm of whole wheat flour (sieved).
  3. You need 200 gm of coconut sugar/palm sugar.
  4. Prepare 200 ml of vegetable/Low fat oil.
  5. You need 100 ml of almond milk.
  6. Prepare 2 Tb of Chia seeds presoaked.
  7. It's 1 Tb of vanilla Essence.
  8. You need 1 Tb of baking powder.

Perfect cookies to serve with hot coffee/tea. These ragi/finger millet biscuits are quite easy to prepare, very healthy and tastes very delicious. They are rich in fiber, protein and calcium. You can have it as evening snacks, in between meals, at tea time or any time of the day without any guilt feelings.

Finger Millet/Ragi cookies step by step

  1. Strain the Chia seeds presoaked for a minimum of 15 minutes and keep aside.
  2. Dry roast the finger millet in a non stick pan for 2-3 minutes on Low heat.
  3. Take off heat and let cool.
  4. In mixing bowl, combine finger millet four, wheat four, coconut sugar,Chia seeds and baking powder and mix well.
  5. Add the vegetable oil, vanilla..
  6. Add milk gradually to make a firm dough. Do not knead too much and use an electric beater if needed.
  7. Cover the dough with cling film and refrigerate for 15 minutes.
  8. Preheat the oven to 180 degree celcius.
  9. Scoop out Golf ball sized dough mix and align them on a baking tray(these cookies will only puff up and not sideways).
  10. Flatten each a bit gently and bake for 10-12 minutes /until done at 180 degree celcius.
  11. Store airtight.
  12. Tip: if you do not have Chia seeds handy, you can skip adding them. They mix well with the cookies while baking and will not be felt or tasted while you eat the cookies.
